Location and characteristics of the vineyard
The vineyards are located at Sommacampagna, a commune situated to the south-east of Lake Garda.
100-150 metres above sea level. A hill of glacial origin with limestone, clay, gravelly and sandy soils.
Training system and plant density
Cordon Spur, with 4,000 to 4,500 vines per hectare. The yield is 2 kg per vine.
First part of October.
Gentle crushing with immediate destemming, followed by fermentation in temperature-controlled stainless steel tanks.
Long maceration on the skins, with frequent pumping-over, in order to encourage the extraction of the noble polyphenols and aromas of this historic grape variety.
A dry red wine.
Deep ruby red.
Marked notes of cherries and pepper when young; if aged it becomes spicier with hints of cinnamon, star anise and liquorice.
Elegant and rounded, with an attractive, gently tannic aftertaste.
Serving temperature 15-16 °C
Excellent throughout the meal. It is delicious with cold cuts, grilled meat and vegetables and with young cheeses.
