Description

Vines
60% Garganega, 20% Cortese, 20% Chardonnay.

Location and characteristics of the vineyard
Custoza, a small fraction of the municipality of Sommacampagna located south east of Lake Garda.

Average altitude of the land and its composition
The hills are located at 100/150 s.l.m, of morainic origin with calcareous, clayey and gravelly soil.

Plant breeding and density
Spurred cordon with yields of 2 kg per vine.

Harvest
The grapes are harvested at the beginning of October. After a brief withering in the plant, they are left to dry further in boxes in the loft.

Winemaking
In mid-February, we proceed with a soft pressing, followed by a short cold maceration and a slow fermentation in white. Immediately after it is placed for about 6 months in barrique and aged in bottles for 8 months.

Organoleptic description
Golden yellow wine when young to then turn to an amber color over the years. Intense, delicate, aromatic on the nose, with pleasant notes of acacia honey, vanilla, dried fruit and candied fruit.

Pairing
Splendid dessert wine, which goes well with traditional Veronese desserts such as pandoro, panettone, shortbread and dry pastries in general. Superlative with cheeses such as Gorgonzola, French Roquefort or English Stilton.
