Custoza DOC Paired with Apulian Friselle with Tomatoes, Basil, Burrata and Capers

Friselle from Puglia, gently softened and topped with Pachino tomatoes, fresh basil, capers and creamy burrata, are the essence of the Italian summer: full of flavour yet wonderfully simple, colourful and perfect for sharing.

To accompany these sun-kissed Mediterranean flavours, we’ve chosen Custoza DOC Monte del Frà, a crisp and fragrant white wine with fruity and floral aromas, and a distinctive saline note imparted by our region’s morainic soils.

Its vibrant soul and subtle minerality enhance the sweetness of the tomatoes and balance the richness of the burrata, creating a harmonious and irresistible pairing. A true taste of the Mediterranean, perfect for relaxed al fresco lunches and terrace dinners with friends on warm summer evenings.

Serving temperature: 8°C – 10°C, best enjoyed in a large white-wine glass to fully appreciate its fresh, fruity aromas.

To keep it at the ideal temperature while serving, we recommend using a wine cooler with ice and water – a simple yet effective touch to bring out every nuance of the wine and make the pairing even more enjoyable and memorable.

RECIPE:

Ingredients (serves 4):

• 4 Apulian friselle

• 250 g red Pachino tomatoes

• 250 g yellow Pachino tomatoes

• 2 burrata cheeses (125 g each)

• 2 tablespoons salted capers (well rinsed)

• A bunch of fresh basil

• Extra virgin olive oil, as needed

• Salt, to taste

• Black pepper, to taste (optional)

Preparation:
Lightly moisten the friselle with cold water to soften them just a little.

Wash and cut the tomatoes into halves or quarters, place them in a bowl and season with olive oil, salt, pepper and the rinsed capers.

Add plenty of fresh basil, torn by hand.

Mix well and let it sit for a few minutes to develop the flavours.

Arrange the friselle on plates and top generously with the tomato and caper mixture.

Finish with the burrata, either whole or torn into pieces, a final drizzle of extra virgin olive oil and a few fresh basil leaves.
